Drink it now or cellar for up to 10 years. No need to decant. Champagne Cattier is a wine producer in France's Montagne de Reims wine district. The company boasts a long winemaking tradition dating back about four centuries and is currently led by the 13th generation of the family. Their wines, of exceptional quality, rest in magnificent underground cellars beneath the family property in Rilly-la-Montagne. Carved nearly 30 meters deep and spanning three levels, these cellars are among the deepest in the entire region. Brut Premier is a blend dominated by Pinot (both Meunier and Noir), with a smaller proportion of Chardonnay and approximately 40% reserve wines. The grapes are carefully selected and harvested from nine villages favored by the house, including Chigny-les-Roses, where the winery is located. Following the harvest and vinification, the wine rests on its lees for over three years before disgorgement. A superb expression of this Champagne house’s winemaking style, the wine reveals a pale gold color in the glass, featuring tiny, fine, and persistent bubbles. On the nose, it displays an intensely fruity aromatic profile, with notes of fig, peach, and plum, complemented by hints of biscuit, sweet spices, and white flowers. On the palate, it is lively, generous, and expressive, with citrus notes interwoven with touches of honey and brioche, creating a delightful complexity of flavors. It possesses a creamy texture on the palate and a long, refreshing finish. Try it with roast chicken in a lemon sauce or roast turbot.
